Easy Vegan Banana Bread
Autumn is here and with it the want for warm goodies and food made with love. Here is a easy recipe for vegan banana bread that is mindful of the Earth, its creatures, and your body.

Ingredients
6 or more really ripe bananas
2 tbs. lemon juice
1 cup oil (Safflower or coconut is a healthy choice here)
1 cup sugar
3 cups flour
1 cup wheat-germ (or add more flour)
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
Preheat oven to 375 degrees and oil 2 loaf pans.
Mash bananas until fairly smooth and then add the rest of the first set of ingredients in with the bananas and mix. Set aside.
Mix the next set of ingredients in a separate bowl, using a whisk once everything is added to ensure even mixing. After whisking well, add in the wet ingredients, mixing everything in until it is "just mixed". If you want to add walnuts (good for brain health), or some vegan chocolate, this would be the point to do it. The picture above shows a chopped up vegan dark chocolate bar included in the bread. Sometimes those are easier to find than vegan chocolate chips and adds a little extra antioxidant health benefit.
Split batter into the two loaf pans. Bake at 375 degrees for 40-50 minutes, checking the center with a toothpick to be sure they are done. Cool for at least 10 minutes before attempting to remove from pan and then cool the rest of the way on a wire rack.

*The more brown the bananas are that you use, the browner you bread tends to be. Sometimes they get dark but they are still baking. Pay attention to the middle and less to the outside. Look within. :)
